Practical and Elementary Methods.', London, Longmans, Green & Co., 1871, 1st edition (presumably a translation from the French but original not cited), signed in blue ink by the author to verso of title page, with printed statement above "Every copy, not furnished, as hereunder, with the signature of the author and proprietor, will be regarded as conterfeit [sic]", added engraved title page + 2 engraved plates depicting dinner served à la Française and à la Russé + numerous engraved ills. in text as called for, xlv,[3],532pp + 24pp catalogue of adverts dated September 1871 at end, a worn working copy, original cloth gilt (worn), inner joints split, 8 pages of contemporary manuscript pen & ink cookery receipts loosely inserted, including "Dutch Sauce for Fish" & "Turtle Soup", plus a contemporary m/s menu card; together with Mrs. Isabella Beeton: 'The Book of Household Management', London, Ward Lock, [1868], 140th thousand, 11 colour plates, working copy a/f, original quarter calf gilt very worn, inner joints worn/reinforced, some leaves loose.

Urbain François Dubois (1818-1901) was a French chef who is best known as the author of a series of recipe books that became classics of French Cuisine, and as the creator of Veal Orloff, a popular dish in French and Russian cuisine. He is credited with introducing service à la Russe to Western European dining, and the term chef. (2)
